"The New York City Department of Health and Mental Hygiene, in partnership with the Fund for Public Health in New York, Inc., has been awarded grant funding from the Centers for Disease Control and Prevention (CDC) Sodium Reduction in Communities Program to implement strategies to reduce sodium consumption in retail food service settings through voluntary adoption of the NYC Food Standards for Cafeterias/Cafes (Cafeteria Standards). This intervention will take place in individual cafeterias and cafes (entities) within two distinct venues; higher education campuses (HEC) and hospitals. The NYC Health Department will recruit 10 entities each within HECs and hospitals, for a total of 20 entities over five years.The primary goal of this intervention is to improve the healthfulness of the foods that are served through implementation of strategies to reduce sodium intake and, in turn, reduce the risk of diet-related chronic disease by improving the heart health of retail food service customers. Specific objectives to be achieved with this intervention include implementing: nutrition standards that include specific sodium criteria; sodium reducing procurement practices; meal and menu modifications; and behavioral economics strategies.The NYC Health Department is assessing compliance with the Cafeteria Standards by adapting a sodium practice assessment tool (SPAT), which will provide the foundation of the intervention's evaluation and analysis. In addition, technical assistance will be provided to entities after on-site assessments are completed to: (1) support implementation of the Cafeteria Standards; (2) assist with purchasing low-sodium food items and using standardized purchasing lists, if available; (3) analyze meal recipes and develop low-sodium alternatives; and (4) implement environmental choice architecture interventions to encourage selection of low-sodium foods.
